Stoofpot van hert

Een halve fles cognac over na de kerst dus dan nog maar een keer. Ingrediënten klaarzetten.



Neem een hoeveelheid tot ruim één kilo stoofvlees van het hert. Mag dus ook 500 gram. Halfom kan ook: de helft hert en de helft everzwijn.


Snijd de groente voor in grove stukken: 2 uien, een grote winterpeen of enkele wortelen, enkele stengels selderij, een paar rapen en knoflook.


Zo'n 80 gram boter smelten tot hazelnootbruin en daarna het vlees aanbraden. Het vlees zouten en met peper bestrooien.



Voeg de groente toe aan het vlees en laat 5 minuten sudderen.


Daarna blussen met 150 ml cognac en 350 ml rode wijn.


De volgende ingrediënten toevoegen: laurierblad, tijm, 1 eetlepel mosterd, 1 eetlepel appelstroop, 1 eetlepel tomatenpuree en 250 ml wildfond. Bestrooi met 1 eetlepel bloem.



Zet de stoofpot 3 uur in de oven op 150 graden. Voeg gedroogde veenbessen toe in het laatste half uur. De stoofpot wordt beter als je hem enkele uren nagaart op een zeer lage oventemperatuur.


Wat witlof, paddestoelen en aardappelen erbij en klaar.

Hoirino me Seleri

Griekse winterstoofpot van varkensvlees en selderij.

500 gram varkensvlees met zout en peper van de schouder in 100 ml olijfolie en 2 eetlepels echte boter bruin braden.


Vlees uit pan scheppen.


In achtergebleven olie 1 ui en 1 prei in 5 minuten zacht fruiten.


Een flinke kop kippenbouillon erbij en 4 selderij-stengels: 10 minuten stoven.


Het vlees teruggooien en een flinke hand verse dille erbij. 45 minuten stoven.


Avgolemono-saus erbij mengen. Zorg dat de stoofpot niet te heet is. Avgolemono maak je door het wit van twee eieren schuimig te kloppen. Daarna de dooiers erdoor roeren, het sap van twee citroenen en een kopje van het kookvocht uit de stoofpot. Goed mengen en in de kookpot gieten.


Even tien minuten laten staan. Het mag niet meer koken, anders gaat het mis met het ei. Op smaak brengen met zout en peper. Er kan maar een ding echt mis gaan met dit recept: te veel of te weinig citroen. Blijven proeven!


Geen idee hoe de Grieken dit serveren. Het gaat prima met aardappel uit de tuin. Wellicht wat dille overhouden om op het bord te strooien?

Choucroute alsacienne

Ingredients
750 grams sauerkraut
Cured pork; Dutch: zuurkoolvlees. (the traditional recipe 'choucroute garnie' has five or more different kinds of meat).
Onion
Apple
Garlic
Glass of white wine (I used a Rieflé Pinot Blanc form the Alsace. Not too dry, a little fruity, which goes nice with the pork and balances out the sour taste of the sauerkraut and apple. If possible use a Riesling)
Spices:
Juniper berries
Bay leaf
Cloves
Caraway seeds (optional: they're not used in the Alsace, but I like them)
Black pepper.



Fry the onions and garlic in goose fat (the proper way), butter or olive oil. Whatever you have. I used olive oil. Throw everything in the pot, cover and cook for 3 hours on a very slow fire. The longer the better... time is the secret to a successful choucroute d'alsace. You can cook this dish late in the evening and eat the next day. Add a little water if it gets too dry. It should be rather juicy


Serve with bread and mustard. And/or a few potatoes. I prefer bread. It's a perfect lunch as well.

Stobá (Dutch Antillean meat stew)

Stobá can be based on beef, but we opted for goat. You have to buy goat with lots of bones. Bones give flavor to a stew. I ended up buying 1,5 kilo goat, which seemed like a quarter of a goat. Chop the goat in pieces about 10 centimeters big.



Rub the meat with lime juice and dry the meat.



Fry the meat in oil until it browns.



Add: two chopped onions, 3 chopped cloves of garlic, 3 tomatoes (cubed), 1 big tablespoon tamarind juice, a little sugar, nutmeg and (don't leave this out!): 1 or 2 madame jeanette peppers.



Mix everything so the meat gets coated with all the spices.



Add enough water to cover the meat, add salt according to taste and simmer for at least 2 hours.



Add one green bell pepper cut in small chunks and one big sweet potato (cubed) and simmer for another half hour. At this point I added a small can of tomato paste for extra flavor.



Add a handful of pickled caper and simmer another 15 minutes.



When you're finished the meat should really fall off the bone. It's almost like a soup. Since the stew contains sweat potato you don't even have to cook rice. But it's good to serve with pickled red onion.

Stoofvlees op Vlaamse wijze (met Westmalle Dubbel)

Flemish beef stew simmered in Westmalle Dubbel Trappist beer. Stoofvlees is a Flemish signature dish. There are many variations. This dish is closely related to Limburgs zoervleisj.

For 4 persons:

4 onions, roughly cut
1 kilo beef, cut in 2 centimeter pieces
75 gram butter
2 tablespoons dark brown sugar (or: appelstroop)
2 tablespoons flower
2 tablespoons vinegar
1 bottle of Westmalle Dubbel Trappist beer
1 bay leaf
a few cloves
dried thyme
2 slices of old bread
mustard

Heat the butter and fry the meat on a high fire until brown (5 minutes and make sure the meat is at room temperature). Remove meat from the pot (season it with salt and pepper and set aside) and fry the onions for 3 minutes. Add sugar and flower and fry for a minute. Add vinegar, beer, bay leaf, cloves, thyme and the meat. Simmer for 1 hour.



Remove crust from bread and cover one side with mustard.



Put the bread, mustard side down, in the pot and simmer for 30 minutes.



Mix the bread with the sauce and simmer for another 1,5 hours (about 3 hours in total). Because of the alcohol and vinegar this dish will age well and taste even better the next day. Serve with fries and Westmalle Dubbel.

Zoervleisj (sour meat)

Zoervleisj (Dutch=zuurvlees, English= (literally) sour meat) is a horse meat stew from Limburg, the southern-most of the twelve provinces of the Netherlands. Since horse meat is quite difficult to buy nowadays you can use beef instead.

Marinate 500 gram cubed beef in water and vinegar (50/50). For 500 gram I used 200 ml water and 200 ml vinegar. Add 6 bay leaf and 6 juniper berries. Marinate overnight or 8 hours. Horse meat needs to marinate longer. You can also marinate two onions together with the meat. Otherwise cut two onions just before cooking. I used plain vinegar (natuurazijn).



The next day:
Dry the meat, discard the juniper berries and keep the bay leafs and marinade liquid.



Fry the meat in hot butter until brown.

Heat the marinade liquid, bay leafs, 4 cloves in a cooking pot. Cold marinate can make the meat tough (apparently). Add the meat and stew for one hour.



In the meantime fry the onion in butter over a low fire until brown.

Add the onions to the cooking pot and 2-3 tablespoons appelstroop (=apple butter).



Stew for another hour and add 2-3 slices of ontbijtkoek. Crumble the ontbijtkoek and stew for another hour or so.



The ontbijtkoek makes the sauce thick so stir regularly from this point onwards. Adjust the taste (salt, sugar). Aim for a distinct sweet and sour taste, but just a bit more sour than sweet.



Serve with homemade fries and apple sauce.
