Okra stew in red palm oil

Fry one onion in hot neutral oil. Add chicken pieces and fry until brown.



Add a couple of tablespoons of red palm oil.



Mix. The red palm oil will form a beautiful orange oily sauce. Fry for a couple of minutes.



Add water and hot pepper and boil until the chicken is half done. The hot pepper will break open and make the 'soup' spicy.



Add seasoning (just salt or a cube of Maggi) and plenty of okra, sliced.



Simmer for at least another 30 minutes. Simmer until the sauce has the right consistency. I added a little arrow root to thicken the sauce.
